As the weather starts to heat up, this beetroot-filled salad is the perfect option for a healthy lunch or dinner & can be whipped up in less than 20minutes using Love Beets Australian Grown Baby Beetroots. It’s nutrient-dense but low in calories & a top choice if you’re trying to get healthy & in shape for summer.
1x 250g pack of Love Beets cooked baby beetroots, sliced
1x 250g bag baby spinach, shredded
1/2 jap pumpkin, cubed
1 large cucumber, diced
1 large red capsicum, de-seeded & sliced
3 tbs sliced almonds
3 tbs pumpkin seeds
Fresh parsley to top
Creamy Beetroot Dressing –
1x 250g pack of Love Beets cooked baby beetroots
1/2 cup chickpeas
1x garlic clove, minced
1 tbs tahini
1. Steam pumpkin. Once cooked, place into salad bowl with remaining salad veggies.
2. For Dressing – Place all ingredients into a blender and combine until smooth.
3. Spoon out dressing mixture out of the blender & through the salad.
4. Sprinkle salad with almonds & pumpkin seeds. Top with parsley & enjoy.
