I’m making a batch of these ahead of FebFast where I’ll be hitting pause on all refined sugar (that is, sugar that is added to foods, not naturally occurring like sugar in fruit) during the month of Feb. I don’t consume many foods that contain added sugars, but there are definitely some that sneak in occasionally! Did you know that sugar can be listed under the following names: brown sugar, raw sugar, corn sweetener, corn syrup, dextrose, fructose, fruit juice concentrates, glucose, high-fructose corn syrup, invert sugar, lactose, maltose, malt syrup, sucrose, sugar syrup, cane crystals, cane sugar, crystalline fructose, evaporated cane juice, corn syrup solids and malt syrup….just to name a few! Eeeek! So I’ll be going with homemade snacks that have no added sugars during the month of Feb! #febfast #pauseforacause

 

Recipe

Ingredients:

  • 1 cup pistachios, shelled
  • 1/2 cup almonds
  • 8 Medjool dates, pitted
  • 1/2 cup shredded coconut
  • 1 tsp vanilla extract
  • 1 tsp water, if needed

Method:

1. Place all ingredients, except water, in a high speed blender and blend until mixture clumps together. Add water if needed.
2. Remove mixture from blender & roll into balls with hands.
3. Enjoy. Note – Can be refrigerated or frozen for longer shelf life.
