After discovering Zambrero’s, I created Healthy Avocado Burrito Bowls at home. These are a nourishing & delicious alternative to the traditional meat and cheese filled burritos! They are loaded with salad veggies, beans & wholegrain rice which means they are full of fibre and will provide you with long lasting energy that will stabilise your blood sugar levels and keep you feeling full. They are high in protein but also vegan, gluten-free & dairy-free. Plus they are amazingly delicious with the tasty spices and creamy avocado dressing.
Recipe (Makes 2)
Burrito Bowl:
1 cup black or brown rice
1 tablespoon coconut oil
1 small red onion, diced
1 cup diced cherry tomatoes
1 red capsicum, diced
1/2 cup pickled gherkins, sliced
1/2 cup corn kernels
2 cups shredded lettuce
2 tablespoons coconut oil
1/2 cup diced red onion
4 medium garlic cloves, minced
1 teaspoon chili powder
1 teaspoon dried oregano
2 tablespoons tomato paste
375g tin red kidney beans or black beans, drained*
Avocado Dressing:
1 large garlic clove
1 large avocado, pitted
1 small lime, juiced
1 tablespoon water
*Note- *I bought spices, rice & beans from The Source Bulk Foods
1. For the rice: Add the rice and 1 tablespoon of oil into a medium pot along with 2 cups of water & cook until tender.
2. For the beans, in a large wok, melt the oil and stir in onion and garlic. Sauté until soft. Stir in the chopped oregano & chili powder, then tomato paste. Add drained beans & cook until heated.
3. For the Avocado, mince the garlic clove in a food processor (I use a Vitamix) & add avocado, lime juice & water. Process into smooth.
4. Divide lettuce between bowls, top with rice, beans, diced tomato, gherkin, capsicum, onion, corn & avocado sauce. Enjoy
