Recipe:  Healthy Orange & Date Slice


Ingredients:

  • 2 cups plain rolled oats
  • 1 cup medjool dates, seeds removed & chopped
  • 1 orange, juiced
  • Zest of 1 orange
  • 1/2 cup coconut yoghurt
  • 3 tbs olive oil
  • 4 tbs chia seeds, soaked in 12 tbs water
  • 2 tbs coconut sugar*
  • 3 tbs shredded coconut*

Method: 

  1. Pre-heat oven to 180C & grease a baking tray.
  2. In a small saucepan, heat 1/2 cup water & add dates; simmer until water has absorbed.
  3. Place remaining ingredients in a mixing bowl & combine. Add dates and stir through.
  4. Scoop mixture into baking tray & spread evenly. Bake for 20minutes or until skewer comes out clean.
  5. Slice & enjoy.
