(Serves 2)

4 zucchinis
8 cherry tomatoes, halved
2 garlic cloves, crushed
1 cup of fresh basil leaves
1 tsp rice bran oil
1 tbs olive oil
2 tbs pumpkin seeds


1. Wash zucchinis & remove ends.
2. Using a Spiralizer (I used the Kenwood Electric Spiralizer), spiralize all the zucchinis & then heat on a fry pan with olive oil & garlic until softened.
3. Stir through cherry tomatoes & basil and cook for 2 minutes. Add pumpkin seeds & olive oil & mix.
4. Serve & enjoy!
