Recipe: Healthy Salmon & Veggie Pizza

1x Wholegrain pizza base*
Tomato paste (no-added salt)
Olive oil
1 large red onion, diced
1x 150g pack smoked salmon, sliced
1 cup pumpkin, diced
1/4 cup sun-dried tomatoes
1/2 capsicum, diced
1/2 cup baby spinach, sliced
4 tbs cranberries
BBQ sauce (no-added sugar)


1. Pre-heat oven to 180C.
2. In a large wok, heat olive oil and cook onion until translucent. Add pumpkin and capsicum & cook.
3. Once pumpkin in cooked through, add smoked salmon & cranberries and cook for 4 minutes, stirring.
4. Cover pizza base in tomato paste. Layer evenly with baby spinach, sun-dried tomatoes and cooked veggies & salmon mixture.
5. Squeeze BBQ sauce over top & bake until base is cooked through and starts to lightly brown.
6. Slice & enjoy.

*can use wholemeal Lebanese bread, a wholegrain wrap, wholegrain pita bread or pre-made wholegrain pizza base).
