Recipe
Ingredients:
- 1 cup almonds (raw, unsalted)
- 2/3 cup shredded coconut + 2 tbs to top
- 1 cup sliced dried mango
- 1 tbs maple syrup
Method:
- Place almonds into a high speed blender (I use a Vitamix) & blend until a powder forms.
- Add coconut & mango to blender & combine until mixture sticks together. Add maple syrup and combine.
- Scoop mixture out of blender & place into a pan. Press out evenly until 2cm thick, sprinkle with coconut and chill in fridge for 2hrs.
- Remove from fridge, slice, serve & enjoy.

What was the crumble topping (seen in your instagram stories) made out of?
I just watched again and it looks as if it’s actually the slice that is crumbly! Whoops, my bad! Looks so delicious can’t wait to try!
I was so excited to try these, but my crappy mixer just wasn’t able to break down the dried mango (used almon flour as it’s not good enough to grind nuts) 😢 I just saved the un-processed mixture in a container and will top on my smoothie bowls with it instead, as all ingredients are delicious!

I soak them in a little hot water to soften first
All the dried mango ive found here have added sugar…what brand do u buy?

Hi there! These look delicious! Can I use almond flour instead of grinding up my own almonds? I have a tonne of almond flour to get through! 🙂

Can they go in a lunchbox for lunch at work or do they need to be refidgerated?
Yes they certainly can! I keep the slice in the fridge until I put it in a little container to take with me for work 🙂
