Ingredients:
Makes 8 serves. Prep: 10min. Cooking: 3 hours
- 2 cups of Queensland Strawberries, washed and sliced
- 3 tbs chia seeds or hemp seeds
- ½ lemon, juiced
Method:
- Preheat oven to 120C and line a large baking tray with baking paper.
- Place strawberries, lemon juice and seeds into a high speed blender and puree.
- Pour strawberry puree onto baking tray. Evenly smooth out with a spatula to make a thin, even layer.
- Cook in oven for 3 hours*. Once cooked, transfer to a wire rack and allow to cool until firm.
- Carefully remove baking paper and slice into pieces with a sharp knife.
- Store in an airtight container in the pantry. Enjoy!
*Note: Cooking times may vary depending on oven. Check regularly and remove from oven once cooked through and no sticky parts.

Hi do you have the quantity of lemon juice? I have meyer lemons & they can yeild up to a 3/4 cup per lemon…very juicy.

Thanks for the recipe it looks great. I wonder if you know how long it would take in a dehydrater, also if the strawberries are not very sweet, would a bit of stevia or xylitol make any difference to the texture….

Hi Bec, this looks so nice. Strawberries are one of my favorite fruit, I have a strawberry, banana oat shake each morning, really healthy. I like the look of your strawberry roll-up bites. I am heading up to my local Woolies to buy some lovely Queensland strawberries here’s hoping they turn out like yours in the picture. Please keep posting different recipes my wife and I love them.
