RECIPE: Layered Summer Salad with Mānuka Honey Mustard Dressing


INGREDIENTS:

Makes 1 layered salad

For the salad:
1 cup shredded baby spinach
1/4 medium red cabbage, chopped
1 tin of corn kernels, drained
2 large ripe avocados, sliced
1 large red capsicum, finely diced
3 large carrots, grated

For the dressing:
Honey mustard dressing
3 heaped Tbsps Comvita MGO 30+ Mānuka Blend Honey
1/2 cup plain yogurt
1/4 cup wholegrain mustard
½ lemon, juiced
1 garlic clove, crushed
1/4 cup extra virgin olive oil


METHOD:

  1. Layer all ingredients into glass jar as shown in my reel.
  2. Whisk Mānuka Honey Mustard Dressing ingredients together in a smoothie bowl. Pour over salad and enjoy!
