Green Powerhouse Pesto Pasta
Makes 4 serves
- 1x 300g pack of 3 Grain Organic Stoneground Pappardelle * pasta
- 1 cup chopped broccolini
- 1 cup chopped asparagus
- 2 zucchinis, chopped
- 1 large avocado, peeled & seed removed
- 2 garlic cloves, peeled & crushed
- 5 tbs extra virgin olive oil
- 1/4 cup cashews
- Juice of 1/2 lemon
- 1 cup basil leaves, chopped
- Cook pasta according to packet instructions. Once cooked, run under cold water, drain & place in large serving bowl.
- In a frying pan, heat 1tbs oil and cook broccolini, asparagus & zucchini. One cooked, place in pasta bowl.
- In a blender, blitz avocado, cashews, lemon, garlic, olive oil & basil.
- Scoop out and mix though pasta and veggies. Serve with your favourite source of protein and enjoy.
