Green Powerhouse Pesto Pasta


Makes 4 serves

  • 1x 300g pack of 3 Grain Organic Stoneground Pappardelle * pasta
  • 1 cup chopped broccolini
  • 1 cup chopped asparagus
  • 2 zucchinis, chopped
  • 1 large avocado, peeled & seed removed
  • 2 garlic cloves, peeled & crushed
  • 5 tbs extra virgin olive oil
  • 1/4 cup cashews
  • Juice of 1/2 lemon
  • 1 cup basil leaves, chopped

  1. Cook pasta according to packet instructions. Once cooked, run under cold water, drain & place in large serving bowl.
  2. In a frying pan, heat 1tbs oil and cook broccolini, asparagus & zucchini. One cooked, place in pasta bowl.
  3. In a blender, blitz avocado, cashews, lemon, garlic, olive oil & basil.
  4. Scoop out and mix though pasta and veggies. Serve with your favourite source of protein and enjoy.
