RECIPE: APRICOT AND COCONUT ENERGY BALLS


Ingredients:

Makes approx. 15 small balls

  • ½ cup dried apricots
  • 1/3 cup desiccated coconut (plus extra for coating)
  • 1/3 cup rolled oats
  • 5 medjool dates – pitted

Method:

  1. Place all ingredients into a blender or food processor and blend until finely mixed and the consistency is sticky enough to be rolled into balls.  
  2. Scoop out 1 tbs of the mixture and roll into a small ball. Roll and coat in extra desiccated coconut. Repeat for remaining balls.
  3. Enjoy.
